Balsamic Honey Roasted Pear Champagne Cocktail
Ingredients:
3-4 Bosc Pears
3 Tbsp Honey
2 Tbsp Balsamic Vinegar
1 tsp Cinnamon
Pinch of Nutmeg
1 tsp Vanilla Extract
1/3 cup water
Champagne
3-4 shots Jameson Irish Whiskey
Garnishes: Cinnamon sticks, thyme sprigs, apple juice/apple sauce, brown sugar
Technique:
Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
Whisk together honey, balsamic vinegar, cinnamon, and nutmeg (if too sweet, add more balsamic).
Slice each pear in half, coat generously with the honey mixture, and bake for 20-25 minutes.
Once soft, remove the seeds/cores from the pears and blend in a food processor with vanilla and water.
Once smooth, pour into a bowl and fill 1-1 with Champagne.
Mix in whiskey shots and chill.
For the garnish: Wet the rims of your glasses with apple juice or apple sauce and line with brown sugar. Garnish with cinnamon sticks and thyme sprigs.
